This Is My Island in the Sun

I bought a pineapple to make Hawaiian pizza, my favourite. And today I wanted to do some baking with the boys. We decided to go for Tropical Pineapple Cupcakes. Why not double the pineapple fun?

You need

6 tablespoons soft margarine
1/2 cup sugar
1 large egg
2/3 cup flour
2 pineapple rings, finely chopped (plus one tbsp juice if using canned)

Cream butter and sugar. And egg. Add flour. Add pineapple.
Makes 12 small cupcakes.
Bake at 350 for 22 minutes.

Cool and Ice...

1/4 cup butter
3/4 cup icing sugar
1 tablespoon lime juice

Beat together until smooth.

Top with finely grated coconut.
